STUDIO CITY (CBS) — Planning a party for the big game Sunday? Make it healthier with tips from the Kin Community.
Beth Le Manach of Deca.tv stopped by the KCAL9 studios Tuesday with some great party ideas. Deca.tv recently launched KinEats which is part of the KinCommunity – the first women's channel launched on YouTube.
Most people use the Superbowl to load up on all their favorite junk foods. It's a kind of that "permitted day of decadence". But Kin says, you can still feel decadent, but eat healthier, by making foods from scratch that incorporate more sophisticated ingredients. People should slow down and fall back in love with cooking. It doesn't need to be complicated to be good.
DRINKS
To be a little healthier, and because Superbowl parties can wear on, go lighter on the alcohol.
To make it fun you can turn it into a game. Create 2 specialty cocktails each representing one of the teams. Guests pick the cocktail that represents their team, and if their team starts to lose, they need to switch to the other cocktail. So whichever team is up , that's the drink of choice.
Buy 1 alcohol base, in this case Prosecco. A light Italian sparkling wine. And then customize the mixers for each team (It's easier and cheaper to go that route). This also makes it easier on eveyone's stomach since they aren't mixing alcohols, when they switch drinks.
• "Patriots Punch": Includes Cranberry Juice, for a nod to New England, Prosecco, and fresh squeezed lime juice)
• "Giants Fizz" (Grapefruit Juice, Prosecco and muddled mint)
Both cocktails are light, refreshing and incorporate fresh juices, as opposed to off-the-shelf mixers that could be loaded with artificial ingredients and give you a terrible hangover
FOR APPETIZERS
Roasted Fingerling Potatoes with Low-Fat Sour Cream Herb Dip
This will satisfy those who are craving potato skins and sour cream. I like to use fingerlings because they roast up well, and look pretty when displayed. They are also great finger food. Served with a low-fat sour cream, loaded with fresh herbs and lemon zest, it packs a lot flavor, without a lot of calories.
Homemade Humus with Grilled Flat bread
Dips at parties can be addictive, and they can actually be a crutch for someone who is maybe shy and feels awkward. They sit there next to the dip, right? So you may as well make it healthy, and homemade humus is so easy to make, and totally worth the effort. I'm always surprise at how nuts people go, when I make this, it's that good. Serve with grilled flatbread, and top with drizzled oil oil, garbanzo beans and fresh parsley
Antipasto Platter
This appetizer has great cross-over appeal. Men and Women equally like it. I find men like the meat on it, and women like the vegetables. The other great thing about it, is that all of it can be store bought so there's very little cooking involved. It includes: Prosciutto, Salami, Kalamata Olives which I like to zest some lemon on top it, Marinated Artichoke hearts and Roasted Red Peppers, mozzarella balls, tossed with herbs and olive oil, breadsticks and Spanish Almonds.
Spiced Chicken Salad Sliders on Brioche Buns
Chicken salad made with yogurt, mango chutney, Indian spices, apples and pistachios. Served on Brioche Buns with butter lettuce. I like this recipe because you can make the salad the day before, and then assemble the sliders right before guests arrive.
Flank Steak Baguettes with Arugula and Horseradish Mayo
I like flank steak because it's a leaner, cheaper cut of meat. Place on toasted banquette with horseradish mayo-use the eggless kind for a healthier option, and top with arugula and caramelized red onions. Seriously good!
Smoked Salmon on Whole Wheat Toast Points with Honey-mustard sauce
Smoked salmon is not just for New Years Eve or Brunch. I love it for big parties because it can feed a lot of people and is a good healthy option that doesn't require any cooking. Serve on whole wheat toast with a sweet mustard sauce, top with fresh dill and capers.
VEGETARIAN SIDE DISH
This is a really simple side dish that comes together in less than 10 mins. Couscous cooks in just 5 mins so half the work is done right there. Top with pinenuts, raisins, dried apricots and fresh mint. This can be a side dish for the meat lovers, or a main dish for any vegetarians out there.
DESSERT
What's a party without dessert? This option has the right mix of healthy foods and "perceived decadence", which actually isn't decadent at all, because it's all good for you.
Greek Yogurt Fruit parfaits with blackberries (for the giants) and raspberries (for the patriots) topped with chocolate covered Acai berries, drizzled honey and toasted almonds. I love strained Greek Yogurt because of it's heavy, dense texture. Even the nonfat kind, has the weight of a decadent pudding. The berries give it a nice freshness, and the the dark chocolate Acai berries, the right amount of sweetness and chew, and the almonds a great crunch. So even though it looks like a very healthy dessert, it's actually quite satisfying.
