Earl 'The Pearl' Monroe Talks About Diabetes And Dining Out

STUDIO CITY (KCAL) — More than 2.3 million Californians have diabetes and are faced with the challenge of identifying healthy meal options at restaurants.

Basketball legend Earl "The Pearl" Monroe who has type 2 diabetes, stopped by the KCAL9 studios on Tuesday to talk about Diabetes Restaurant Month. Monroe is teaming up with Merck for the campaign.

Several Los Angeles area restaurants will be taking part in Diabetes Restaurant Month, including Off Vine Restaurant, Osteria Mamma, and all three locations of Tender Greens.

Chicken Breast with Tropical Fruit Salsa

6 oz. chicken breast

1/2 oz. garlic

1 tsp olive oil

1 oz. honeydew melon

1 oz. papaya

1/2 oz. raspberries

1/2 oz. orange juice

Pinch salt

Pinch pepper

3 oz. green beans

1 tsp olive oil

2 oz. blackening seasoning

Blackening Seasoning (2 oz.)

1/8 tsp sugar

1/4 tsp pepper

1/4 tsp cayenne pepper

1/4 tsp cumin

1/8 tsp nutmeg

1/2 tsp thyme

Instructions

Heat 1 tsp oil on a medium heat in small pan. Pound chicken in the blackening spices and sauté in pan, 3 minutes on each side. Steam green beans and sauté in 1 tsp olive oil and garlic for 1 minute. For the fruit salsa, combine fruits into one bowl and mix evenly with orange juice. Salt and pepper to taste.
