The cooking and entertaining season is right around the corner and cookbook author, recipe developer, blogger and food writer, Jill Silverman Hough has come up with some great recipes that are quick, easy, festive and perfect for any holiday party. She developed an exclusive recipe for Good Day! Recipe is below.
Lindsay Olive and Pimiento Cheese
At a Glance:
Prep Time: 15 minutes
Servings: 6 to 8
Ingredients:
8 ounces (2 cups) coarsely shredded Cheddar cheese
4 ounces spreadable goat cheese (chèvre), cut into 3 or 4 chunks
3/4 cup Lindsay® Naturals Manzanilla Olives Stuffed with Natural Red Peppers, plus 2 or 3 more, sliced, for garnish
1/2 cup sliced Lindsay® Naturals Black Ripe California Olives, plus a few more for garnish
1/4 cup Lindsay® Pimientos, divided
Salt and black pepper, to taste
Crackers, toasts, or celery sticks, for serving
Directions:
Place cheeses in the bowl of a food processor and pulse to combine. Add olives and pimientos and pulse to coarsely chop. Add salt and pepper to taste. Transfer to a serving bowl and garnish with sliced olives.
Cover and refrigerate until about 30 minutes before serving time, then bring to room temperature. Serve with crackers, toasts, or celery sticks.

Tips:
To make the recipe without a food processor, roughly chop the Cheddar, olives, and pimientos before stirring all the ingredients together in a bowl. You can also use a 4.25-ounce can of Lindsay® Chopped California Olives, drained, instead of chopping the sliced olives.
If you like, use cream cheese instead of the goat cheese. You can also try other cheeses in place of the Cheddar.
