Chef Jonathan Goldsmith's bacon recipe:
Ciliegine di bufala con pancetta affumicata
Start with grape-sized balls of bufala mozzarella. Wrap in smoked bacon (pancetta) and basil.
Add a drizzle of reduced balsamic vinegar and oven-gild them (quick heat for about two minutes) until the bacon starts to sweat and the flavors meld.
