Mail-Order Barbecue

Barbecue joints across the United States are in the business of cooking up food and shipping it far and wide via FedEx or UPS.

No matter where you live in the U.S. or Canada, it's possible to get amazingly good barbecue BBQ (beef, pork and more) that you can serve at home and tastes just as if it had come off the grill or emerged from an outdoor smoker.

So on Thursday's The Early Show, resident chef Bobby Flay talks about different styles of barbecue. The places he focuses on are: Memphis, Tenn., Kansas City, Mo., Driftwood, Texas and Kinston, N.C.

Memphis: Corky's

Corky's spare ribs are slow-smoked for over seven hours, and the pork shoulder is slow-smoked for over 22 hours. This tradition of slow-cooking creates tender meat that falls off the bone. The meat is hand-pulled and only the choicest portions are selected. All items shipped come with Corky's BBQ sauce and dry-rub seasoning. Memphis is different from other regions in that one can get both wet and dry ribs. So when you order from Corky's you will get to choose from both toppings.

Shipping Information:
Shipping is available throughout the United States and parts of Canada. All foods are fully cooked, vacuum-sealed and frozen. The items are then packaged in 1-½ inch Styrofoam coolers filled with dry-ice.

All frozen food is shipped via FedEx two-day shipping at no additional charge, Monday through Wednesday within the contiguous 48 states (Hawaii and Alaska for an additional $20). Standard and Priority Overnight shipping are available for an additional fee. Cases and half-cases of sauce and seasoning are also shipped via FedEx two-day. Sauce and seasoning gift packs are shipped via FedEx ground. Ground service takes five-to-seven business days (M-F) for delivery.

Kansas City: Jack Stack BBQ

Prior to cooking, the meat is prepared with the maker's proprietary rubs and seared, to retain the natural juices vital to the tenderness and taste of the final product. The meat is then cooked for many hours at low temperatures in a distinctive hickory wood-fired cooking process, producing a seared exterior and a tender interior.

Select from spare ribs, pork burnt ends, hickory pit beans, cheesy corn bake, and various seasonings and sauces.

Texas: The Salt Lick

The open-air, slow roasting barbecue became so famous that when the city of Austin built Bergstorm International Airport, The Salt Lick was one of the few restaurants chosen to represent what Austin dining is to the rest of the world. Salt Lick barbecue stands out in the Hill Country (of Texas) because it's based on traditional family recipes and cooking methods, using a vinegar-based sauce instead of a tomato-based one like most regional barbecue, and cooking the meat directly over hot coals.

North Carolina: Kings BBQ

Kings' chopped barbecue is slow-roasted, pulled from the bone, and infused with a mild vinegar sauce, a staple of eastern North Carolina barbecue.
Select from hand-chopped barbecue pork ribs, cole slaw, potato salad, hush puppies, collard greens, black-eyed peas, squash, and various sauces and mixes.
