The Rebel Chef Puts His Twist On Game Day Grub

STUDIO CITY (CBSLA.com) — The Super Bowl is as much about the food as it is the big game!

Antoine Sicotte, AKA The Rebel Chef, visited the KCAL9 studios Friday to share his twist on classic game day grub.

Buffalo Chicken Bites

Prep Time: 15 mins Cook Time: 15 mins

2 cans (8 oz.) Seamless crescent dough sheet
1 cup diced cooked chicken
1/4 cup Buffalo wing sauce, Frank's RedHot preferred
1/4 cup crumbled blue cheese or shredded Mozzerella cheese
4 oz. cream cheese, softened
2 tbsp. chopped scallions

1. Cut each dough sheet into 16 rectangles. Place rectangles on ungreased cookie sheets.
2. In bowl, mix chicken, wing sauce, blue cheese, cream cheese, and scallions.
3. Spoon mixutre on half of each rectangle and fold dough over filling. Press edges with fork to seal.
4. Bake at 350°F 13 to 16 min.

Makes 32 bites


Burgers with the Worx (Deluxe Burgers)

1 lb. ground beef (a mixture of veal, pork, and beef, or meat of your choice)
1 small onion, chopped
1 clove garlic, crushed
Salt and pepper
3 oz. pancetta or bacon slices
2 oz. cream cheese
2 oz. goat cheese
2 tbsp. hot sauce
½ cup French Fried Onions
1 package mushrooms of your choice, sliced
1 tbsp. olive oil
1 avocado, sliced
1 tomato, sliced
Dijon mustard
4 English muffins (or any other buns of your choice)

Preparation

To make patties, combine ground meat, chopped onion, and garlic in a bowl. Season with salt and pepper. Shape into 4 patties and set aside. Cook pancetta or bacon in a pan or in the microwave until crispy. Set aside. In a small bowl, combine cream cheese, goat cheese, and hot sauce and mix until smooth. Season generously with salt and pepper. In a pan, over medium heat, sauté sliced mushrooms and cook until golden brown. Season with salt and pepper and set aside. In the same pan used to sauté the mushrooms, cook patties in olive oil. To assemble burgers, toast English muffins and spread bottom halves with Dijon mustard. Top each bottom bun with bacon, a patty, a few tomato slices, a few avocado slices, 1 tbsp. mushroom and 2 tbsp. French fried onions. Spread the top half of the English muffin with cheese mixture. Close burgers and enjoy!

KICKIN' BBQ ORANGE-SPICE WINGS

Prep Time: 5 mins Cook Time: 0 mins
3 lbs. chicken wing pieces
3/4 cup BBQ Sauce
2 tbsp. orange juice concentrate
2 tbsp. honey
1/2 tsp. ground cinnamon

1. Bake wings in foil-lined pan at 500 °F on lowest oven rack for 20 to 25 min. until crispy, turning once.
2. MIX BBQ Sauce, orange juice concentrate, honey and cinnamon in large bowl.
3. TOSS wings in sauce to coat.
Makes 6 to 8 servings

Alternate Cooking Directions:
Broil 6-inches from heat 15 to 20 min., turning once.
Grill over medium heat 20 to 25 min., turning often.
