Food Truck Review: No. 19

WOOD FIRED PIZZA

Near as we can figure out, this is a chain of rentable trucks that produce genuine wood-fired pizza at various fairs and parties. We caught up with one at the Williamstown, N.J. Food Truck Festival in early April.

It's a great idea. There is, indeed, a high-temp wood oven in the truck, and it churned out a pizza in just two minutes. To be honest, it could have used a bit more time. Our pizza came out a bit doughy and the crust was anything but crisp.

To be fair, the ingredients tasted fresh and our margherita pizza had some good burn marks on the top (that's a positive). It sure wasn't overloaded with ingredients, however, and when you're paying $14 for an 11-inch pizza, you want something more than this.
