Dietz & Watson Featuring Chef Walter Staib Valentine's Day Recipe

Chef Walter Staib shows Ukee Washington some romantic meals to make on Valentine's Day.

This meal is easy enough for a novice cook to put together in a few minutes. It uses readymade ingredients, such as Dietz & Watson proteins and cheeses, artichoke hearts and other easy things already prepared. If you're in a hurry, purchase vegetable that are already cut in the produce section of the grocery store. This meal is fresh and will impress any sweetheart who will never know how little time it took. Impress your valentine with a homemade meal instead of going out to eat.

Lovers' Arugula Salad

Ingredients

  • 3 cups baby arugula, washed
  • 6 slices Dietz & Watson Proscuitto
  • 1 pear, sliced
  • ½ cup Dietz & Watson feta cheese
  • ¼ cup olives
  • 4 artichoke hearts
  • 6 tablespoons balsamic vinaigrette

How to Make

  1. Separate arugula onto two salad plates.
  2. Top with prosciutto, pear slices, feta cheese, olives and artichokes. Drizzle each salad with balsamic vinaigrette.

Asiago & Spinach Chicken Sausage Linguine

Servings 2

  • ½ pound cooked linguini, al dente
  • 1 tablespoon olive oil
  • 1 small zucchini, julienned
  • 1 small yellow squash, julienned
  • ½ onion, chopped
  • 1 Roma tomatoes, seeded and diced
  • 1 Tablespoons minced garlic
  • 1 ½ cups spinach leaves, cleaned
  • 1 tablespoons basil, chiffonade
  • ¼ cup white wine
  • Salt and pepper, to taste
  • ½  pound Dietz & Watson Asiago & Spinach Chicken Sausage
  • Salt and pepper, to taste

How To Make

  1. Preheat a grill or grill pan over low heat. Grill sausages on all sides until browned, about 10 minutes.
  2. Heat a large sauté pan over medium heat. Add olive oil and garlic and onions, and sweat for two minutes. Add zucchini and squash and sauté for 3 minutes. Add basil, parsley, red pepper flakes and white wine and cook over medium heat for 10 minutes. Add tomatoes, basil, parsley and spinach and sauté for two more minutes. Season with salt and pepper. Add linguini and toss to combine.
  3. To serve, place pasta on a pasta bowl. Place sausages slices on top and serve warm.

Crostini with London Broil Roast Beef and Horseradish

Ingredients

  • 1 package of pre-made crostini's
  • 1/2 pound Dietz & Watson London Broil Roast Beef sliced into 1 1/2 inch squares
  • Kosher salt and freshly ground black pepper
  • 2 to 3 teaspoons Dietz & Watson Hot and Chunky Horseradish Sauce

How to Make

  1. To assemble, top the crostini with a slice of beef, a dollop of the horseradish sauce, and a small piece of frisée and serve.
