Love's romantic dinner for two

With just two days until Valentine's Day, love is definitely in the air. So who better to prepare out Valentines dinner than Tim Love?

Love, the chef and owner of the Lonesome Dove Western Bistro in Fort Worth, Texas, shared recipes for a romantic dinner for two that's sure to wow your sweetie this year.

RECIPES:

Roasted Rack of Lamb and Watercress Salad

INGREDIENTS:
1/2 of an American Lamb rack (should be an eight bone rack minimum) tell the butcher to leave the fat cap on but chine bones off
1/4 cup olive oil
1/4 cup coarse salt
1/4 cup red chile powder
1/4 cup rosemary fresh chopped
1/4 cup cilantro fresh chopped
1/4 cup coarse pepper
1/4 cup water

For Salad:
2 bunches watercress
Juice from one whole lime
Olive oil
Salt and pepper

METHOD:

Preheat oven at 350 degrees F.

Heat a heavy cast iron skillet on medium heat.

Mix salt, chile powder, pepper, rosemary, cilantro, and water in a stainless bowl to make a paste.

Score the top of the half rack with a sharp knife all the way through the fat cap to the top of the meat (about a half inch deep).

Pack the paste all around the rack.

Add oil to the cast iron skillet and place rack fat side down in skillet and sear for 2 minutes.

Flip rack and place skillet in the oven for 18 to 20 minutes.

While the rack is cooking in the oven, clean the watercress.

Remove rack from oven and let rest for five minutes.

While the meat is resting, mix the watercress, lime juice and a touch of olive oil and season with salt and pepper to taste.

Slice the rack and serve with the salad immediately.

Goat Cheese Souffle

INGREDIENTS:
1/3 pound unsalted butter
1 cup all purpose flour
1 tablespoon Shallots, minced
1 teaspoon garlic, minced
1 cup whole milk
6 eggs, separated
12 ounces Goat Cheese
2 tablespoon butter
1/2 cup cornmeal
1/2 cup walnuts
1 tablespoon Game rub
1/2 teaspoon salt

METHOD:

In a saute pan, melt 1/3 pound butter, sauté shallots and garlic. Add flour and form roux. Add milk and mix well, remove from heat and pour into mixing bowl. Add egg yolks, game rub, salt and goat cheese and mix well. Whip all egg whites into stiff peaks. Mix 1/3 whites into mixture. Fold the remaining 2/3 in.

Rub seven ramekins with butter, dust with cornmeal. Line ramekins with walnuts. Bake at 300 degree for 30 minutes.

Love Potion

INGREDIENTS:
2 ounces Black Spiced Rum
3/4 ounce crème de cacao
1/4 ounce crème de menthe

METHOD:

Stir over ice and served up or in a chilled glass.
