Narsai's Quick Chicken In A Pot Recipe

SAN FRANCISCO (KCBS)— After all the rich food we've been eating over the holidays, here's a nice and easy recipe that's going to go just as easy on your stomach.

Chicken in a pot is a simple dish that everyone absolutely loves. A piece of nice dry French bread would go well with this for dunking.

Serves 4

8 - 10 Pieces skinless chicken, such as breast, leg or thigh
1 quart water
3 cloves garlic, minced
1 large onion cut in 3/4-inch pieces
4 small potatoes, cut in half or 10-12 tiny "creamer" potatoes
1/2 bulb fennel (or 2 stalks celery) cut crosswise in 1/4" thick slices
3 carrots cut 1/2 inch thick diagonally
1/3 cup chopped parsley
1/2 tsp red pepper flakes
1 tsp dried basil or mixed herbs
1 tsp salt, or to taste

Place water in a 5-6 quart Dutch oven. Add all the chicken pieces except the breasts. Add the garlic, onion, potatoes and fennel and cook over medium heat for 15 minutes. Then add remaining ingredients and the reserved chicken breasts and cook for about 10 minutes or until everything is tender. Serve in shallow soup plates with the broth.
