Market District Recipes: Tuna Burgers & Fettuccine With Fresh Tuna Sauce

Tuna Burgers

Serves: 4

Cook Time: 6-8 minutes

Ingredients:

  • 1 ¼ pounds fresh tuna, diced
  • 3 tbsp red onion, thinly sliced
  • ½ cup kalamata olives, pitted and chopped **Available in the olive bar
  • 1 tbsp capers
  • Salt, pepper and cayenne pepper to taste
  • ¼ cup mayonnaise
  • 1 tsp anchovy paste
  • 2 tbsp whole grain mustard
  • ½ tsp garlic
  • 4 challah buns, split and toasted **Available in the Bakery
  • Sliced tomatoes and arugula

Directions:

Put the tuna, onions, olives and capers in a food processor and pulse until the tuna is finely chopped; season with salt and peppers. Form the mixture into four patties.

Brush the burgers with olive oil and cook over moderately high heat, turning once, until golden and cooked through (145°.)

In a bowl, mix the mayonnaise, whole grain mustard, garlic and anchovy paste; spread on the buns. Top with the burgers, tomato and arugula.

Fettuccine with Fresh Tuna Sauce

Serves: 4-6
Prep Time: 15 minutes
Cook Time: 15 minutes

Ingredients:

  • 1 lb fresh tuna, cut into ½ inch dice
  • ½ cup dry white wine
  • 1 tsp finely grated lemon zest
  • ½ lb cherry tomatoes, cut in half
  • ¼ cup Market District™ olive oil
  • ½ cup fennel, chopped
  • ½ cup onion, sliced
  • 1 clove garlic, minced
  • ½ tsp crushed red pepper
  • 1 jar Market District™ Tomato Basil Pasta Sauce
  • 1 lb Market District™ Fettuccine, cooked according to package directions
  • Salt and freshly ground pepper

Directions:

Add the tuna, wine and lemon zest, to a bowl and toss to combine. Cover and set aside.

Heat the remaining olive oil in a large, deep skillet. Add the fennel, onion and garlic to the pan and cook over medium-high heat until lightly browned. Add the crushed red pepper and the tomatoes and cook until tender.

Add the tuna mixture and cook for 1 minute. Add the pasta sauce and bring to a simmer. Remove the skillet from the heat.

Add the fettuccine and toss well. Season with salt and pepper and serve.
