Chef Aaron Hoover stopped by PTL today to show off some unique recipes that feature beer!
Orange Pecan Beer Pancakes
Serves 4
- Flour, all purpose 2 c
- Sugar 1 T
- Baking Powder 2 t
- Salt ¼ t
- Eggs 2 ea
- Butter, melted 2 T
- Wheat Beer 1 ½ c +
- Orange zest ½ t
- Pecans, toasted 1 c
- Vegetable oil 1 T
Mix flour, sugar, baking powder, and salt in a bowl. Whisk eggs, butter, beer, and zest in another bowl. Add wet ingredients to the dry ingredients and stir with a spoon until just mixed together, small lumps are ok. Fold in pecans.
Heat oil on a large nonstick griddle over medium high heat. Pour batter in ¼ c portions to make the pancakes. Flip when they are golden brown on the bottom and remove from pan when both sides are done.
Peach & Beer Sauce
Serves 4
- Peaches, med. dice 2 c
- Wheat Beer ¼ c
- Sugar ¼ c
- Brown Sugar ¼ c
- Cornstarch 1 T
- Vanilla extract ½ t
- Nutmeg, ground pinch
Combine all ingredients in a saucepan over medium high heat. Stir while heating to a simmer.
Once the sauce thickens, reduce heat and simmer for 2 minutes. Remove from heat, allow to cool slightly, and serve.
Grapefruit Gose Sorbet
Serves 2
- Gose Beer 12 oz
- Sugar 3 oz (vol.)
- Corn syrup, light 1 T
- Grapefruit Zest 1 t
Combine all ingredients in a bowl. Whisk liquid to remove most of the carbonation from the beer and to help dissolve the sugar. Pour into a suitable container and freeze.
