PHILADELPHIA, Pa. (CBS) -- The former "Latest Dish" and "Fluid" nightclub have been transformed into Kabobeesh Restaurant and Eclipse Hookah Lounge, respectively.

Owner Omer Sabir says both establishments at 613 South 4th Street, near South Street, are Pakistani-inspired.

"Authentic Pakistani cuisine consists of all kinds of kabobs," Sabir says, "like lamb kabobs, chicken kabobs, lamb chops, beef tikkahs, resham kabobs, and also we offer different curries."

For certain dishes, he advises, it's best to call ahead.

Upstairs, Eclipse Hookah Lounge is the former Fluid nightclub, minus the bar, which Sabir says they had to wall off.

"That original Fluid bar is still trapped inside the second floor.  It pretty much has no entrance to it right now."

Chef Miguel Martí Rossello goes back to his roots as he opens a new Spanish tapas bar in the Italian Market.

Torero Paella Bar is located at 940 South 9th Street.

"The recipe of the paella is from my grandmother -- mother of my father, from Alicante.  (It makes) the best paella from Spain.   The recipe is from my grandmother to my mother; my mother gave it to me.  It's one recipe of the family."
