Recipe: Chia Seed Coconut Pudding
That's right--- the same chia seeds you put atop the heads of ceramic characters are a delicious ingredient that you should be incorporating into your diet.
The nutritional benefits of chia seeds are numerous. They contain notable amounts of healthy omega-3 fatty acids, carbohydrates, protein, fiber, antioxidants, and calcium. One ounce of chia seeds contains a whopping 11 grams of fiber and 4 grams of protein. Talk about a seed that packs a punch!
Chia seeds have significant culinary versatility as well. They can be added on top of yogurt, salads, and pasta for a delicious crunchy texture. They have a subtle and earthy tang.
However, chia seeds can take an entirely different form when they are soaked in any sort of liquid---they become gelatinous and soft. Chia pudding made with coconut milk is a delicious and healthy way to enjoy dessert.
What You'll Need:
- 1 13.5 oz can of coconut milk
- 1/3 cup of water
- 1/2 tsp vanilla extract
- 1/4 tsp lemon zest
- 3 tbsp black chia seeds
- Agave nectar or other sweetener (to taste)
- an airtight Tupperware container
To Assemble:
- Whisk all ingredients, except chia seeds, together in the tupperware
- Mix in chia seeds
- Cover with lid and let set in refrigerator for at least 12 hours
- Enjoy!
