One area that's disappointed us in the 50-days-50-trucks "Food Truck Frenzy" is that there aren't enough creative breakfast venues. Sure, you can buy an egg sandwich or an adequate pastry, but we were looking for some innovation.

Happy Sunshine gets credit for opening at 6 a.m. And give them points, too, for being inexpensive. A large coffee was just $1 – nice value. And we ordered a sandwich comprising hash browns, bacon, scrambled egg and cheese. It was the size of a Wawa classic and set us back just four bucks. It's enough for two people to share.

Alas, it was just so-so. Fresh roll, nice crisp bacon. But it loses points for using a frozen pre-cooked hash brown patty that looked like a McDonalds escapee. Hey, you've got a griddle right there on the truck. How about firing up some fresh potatoes rather than dropping that hockey puck in boiling oil?
