Stephanie And Tony's Table: Pasta And Fava Beans
Ingredients:
1 lb short cut pasta,
6 fava beans, beans removed
handful sugar snap peas, beans removed
fresh mint leaves
pecorino cheese, finely shaved
salt to taste
lemon juice.
Directions:
Cook pasta according to directions on package. Blanch fava beans for a few minutes. Strain beans and add to an ice bath, remove casings.
In a pan heat oil and add beans, then add sugar snap peas and pasta. Saute together and mix in fresh torn mint.
Shave pecorino on top.
