Recipe: Cauliflower Rice

"Cauliflower rice is so easy I'm embarrassed to give you a recipe, but CBS says I have to, so..."

  
Cauliflower Rice

Ingredients:

1 large head cauliflower, broken into 1-inch florets

Directions:

Depending on the size of your food processor, you may need to work in 3 or 4 batches. All you do is pulse them in the food processor until you have what looks like small-grained rice or couscous.

Now that you have cauliflower rice, heat a large skillet and add 3 tablespoons vegetable oil (not olive).

When the oil shimmers, dump in the cauliflower and 1 teaspoon salt. Stir-fry over medium heat for about 5 minutes, or until there's no more liquid in the skillet.

There you go! You can substitute this for real rice pretty much anywhere except in dessert recipes.
