Mike's Mix: Bluestem Bar's Sage White Flip

MINNEAPOLIS (WCCO) -- French Meadow opened in Minneapolis 30 years ago as an all-organic bakery with locally-sourced ingredients.

Since then they have expanded into bakeries and cafes in multiple Twin Cities locations, and they most recently opened Bluestem Bar. It's a full-service, sit-down restaurant with craft cocktails in a warm, retro setting. Bar manager Chaz Sandifer gives us this recipe for a fantastic drink on the menu.

Sage White Flip
1 egg white
1.5 oz of Art in the Age Sage
3/4 oz (skinny) fresh lemon juice
3/4 oz (skinny) fresh lime juice
3/4 oz (skinny) simple syrup

Add egg white to an un-iced cocktail tin, followed by liquid ingredients. Shake without ice first. Then add ice to the cocktail tin and shake a second time. Double strain into a coupe cocktail glass. Garnish with a fresh leaf of sage.

Taste Test
Light and refreshing, this cocktail uses a gin-like spirit with the essence of sage, lavender, spearmint, thyme and rosemary. An additional note of sage is delivered on the nose with a fresh sage-leaf garnish.
