Chili Lime Tilapia Tacos
Ingredients
2 8oz. filets of fresh tilapia
2 tbsp. extra virgin olive oil
2 ½ tbsp. Luvafoodie Chili Lime Salt Free Spice rub
6 small corn tortillas
3/4 cup nonfat sour cream
1 cup of shredded lettuce
1 avocado (diced)
2 tsp. lime juice
3/4 cup of prepared salsa
Directions
Preheat oven to 375 degrees.
Coat each side of tilapia filets with olive oil and sprinkle each side with chili lime rub (2 tbsp).
Put tilapia in an 8x8 oven proof pan, bake for 20 minutes.
Warm tortillas up in oven for three minutes.
Remove skin and pit from avocado, dice avocado into bite size pieces and add lime juice.
In a small bowl, combine sour cream and 1/2 tbsp. chili lime rub, set aside.
On two plates, place three tortillas each. Divide tilapia up into pieces and top on tortillas.
Top with, lettuce, salsa, sour cream and avocado.
Garlic Green Herb Arugula Flatbread
Ingredients
1 1/2 cups of Arugula
1 flatbread
1 tbsp. Luvafoodie Garlic and Green Herb Salt Free Spice Blend
2 tbsp. Extra Virgin Olive Oil
2 tbsp. Parmesan cheese
1 1/2 tbsp. of chopped walnuts
Directions
Preheat oven to 375 degrees.
In a food processor or blender add all ingredients except flatbread. Pulse or blend until all ingredients are mixed together, about two minutes.
Spread mixture over flatbread.
Bake for seven to 10 minutes or until bottom of flatbread is brown and crispy.
Serve as a snack or serve with Luvafoodie Happy Heart Soup or Carrot and Ginger soup.
Happy Heart Carrot and Ginger Soup
Ingredients
4 tbsp. unsalted butter
1 onion, chopped
2 small leeks, minced
1 tbsp., grated fresh gingerroot
3 cups grated carrots
1 small parsnip, grated
1 potato, peeled and grated
1 tbsp. honey
4 cups low sodium or sodium free chicken broth
1 1/2 Luvafoodie Happy Heart Salt Free seasoning
1 tbsp. fresh lemon juice
Optional garnish: Nonfat sour cream
Directions
Melt butter in saucepan, add the onion, leeks, ginger and Luvafoodie Happy Heart seasonings and cook slowly until soft.
Stir in carrots, parsnip, potato and honey. Cover and continue cooking until soft, about 20 minutes over medium heat.
Add the broth, return to a boil. Reduce heat and simmer until vegetables are soft and tender over medium heat.
Puree the soup and add lemon juice.
Garnish with sour cream- optional
Serves 4 to 6 depending on size of bowl.
