Healthy & Delicious Holiday Recipes

It is especially hard to keep from gaining weight during the holiday season.

Dr. Beth Westie appeared on WCCO 4 News at Noon Wednesday to share these two delicious recipes that will indulge your sweet tooth without packing a big caloric punch.

Pumpkin Pie

- 2 organic eggs
- 1 can organic pumpkin puree
- ½ cup sweetener (you can use sugar, stevia, honey)
- 1/3 cup vanilla coconut milk
- ¼ cup low fat cottage cheese
- 2 tsp GF vanilla extract
- 2 scoops of vanilla protein powder
- Seasonings (cinnamon, cloves, ginger, nutmeg)

* Mix in blender and bake in pie tin at 350 degrees for an hour.

Chocolate Mint Cookies

- 1 cup peanut butter
- 1/4 cup honey
- 2 tbsp coconut oil
- 1 1/2 cup chocolate protein powder
- 2 cup GF quick oats
- 4 drops peppermint oil

* Melt peanut butter, coconut oil and honey in microwave for 1 minute.
* Mix in rest of ingredients and roll into 1-inch balls and flatten.
* Store in fridge.
