Mike's Mix: Eiffel Tower Sparkler

Every Friday, Mike Augustyniak picks up a new cocktail recipe from a local mixologist. Throughout April, Mike's picking up some elegant recipes from the Loring neighborhood's esteemed Café & Bar Lurcat. This week's selection uses the elegant flavors of Chambord (a black raspberry liqueur) and Limoncello (an Italian lemon liqueur) and somehow comes out not overly sweet.

Ingredients
1 oz. Chambord
1 oz. Limoncello
1 oz. Lurcat's house mix (see below)
1 oz. sparkling wine

Lurcat's 'House Mix' (yields 1 quart)
6 oz. lime juice
4 oz. lemon juice
8 oz. simple syrup
14 oz. water

Directions
Pour ingredients over a lowball glass filled with ice and stir. Garnish with a cherry.

Taste Test
For a drink that contains a lot of bold, sweet flavors, this drink wasn't as sweet as I expected. The citrus from the house mix and the dryness of the sparkling wine do a good job at balancing things out. Feel free to play with the ratio of liqueurs to sparkling wine to adjust the flavor to your personal preference.
