Curiocity: Cajun 2 Geaux To Open Circle Pines Restaurant

Good news for those craving a taste of the Bayou. The man who brought us delicious Cajun cuisine from a bright green food truck is expanding his efforts and opening a brick-and-mortar in the north metro.

Chef Tim Glover, of Cajun 2 Geaux, will open Bistro La Roux in Circle Pines, hopefully by this summer.

Glover, a former aircraft mechanic for the military, was raised in the south and has always had a passion for cooking up classic New Orleans dishes. He utilized his mechanic skills to convert a family RV into a complete kitchen on wheels, bringing flavorful Jambalaya, crawfish étouffée and po'boys to hungry lunchgoers across the Twin Cities.

Bistro La Roux will have the same great food, both for dine-in and carry-out, plus local craft beer, wine and jazz music.

Having become accustomed to a diner's full experience with his food truck, the restaurant's kitchen will have an open concept so customers can enjoy the sights and smells of New Orleans.

Chef Tim said he'll also be adding a Sunday brunch menu.
