Cooking With WCCO: Cucumber Pineapple Mango Salad

MINNEAPOLIS (WCCO) – Spring is the season of salads! But lettuce, carrots, celery and dressing can get boring.

So, this week on Cooking with WCCO, Chef Jaime VanderWoude from Jerry's Foods is cooking up something fresh! Chef VanderWoude created a cucumber pineapple mango salad in the Cambria Kitchen.

Cucumber Pineapple Mango Salad

Ingredients
1/3 cup cilantro
1 cucumber peeled and diced
1 cup pineapple chopped
1 mango diced
1- 2 limes zested and juices
Salt and pepper to taste

Directions
Combine all ingredients and toss together.
Add salt and pepper.  Serve immediately or chilled.
