Taste Of The Town Tastes The Nation

MIAMI (CBSMiami) - It's was a bustling kitchen one recent morning at Meat Market on Lincoln Road.

Executive Chef Sean Brasel is sharing his work space with two other chefs who are here to give a sneak taste as to what they'll be cooking up next week at one of the biggest foodie events anywhere: SOS Taste of the Nation.

Chef Sean is joined by Chef Todd Erickson of Haven and Hua Hua's Tacqueria and Chef Timon Balloo of Sugarcane and Bocce Bar. Timon is Restaurant Chair for the fantastic foodie event which fights childhood hunger.

"This is the event for the summer. You have over 60 chefs from Broward and Dade county all coming together for this great cause," Timon said.

The creative cooks are preparing unique small plates for the event which will be held at at the Lowe's Miami Beach.

Chef Timon prepared a dish which surprised CBS4's Lisa Petrillo when he said it was SPAM.

"We take pork shoulder, ham and bacon and we grind it with special SPAM spices. It's a homemade version of spam. It's so it's not SPAM in the can," said Chef Timon.

Meat Market's Chef Sean, while getting his short ribs out of a boiling bag, talks about the process behind dish.

"It's a very slow process. The meat cooks in the bag on a low temperature" said Chef Sean, while opening up his bag of boiling short ribs.

The ribs would be served over quinoa bean cakes.

"These are quail eggs. We're going to do a little sunny-side-up quail eggs," said Chef Todd.

Chef Todd placed the quail eggs on top of decadent pieces of baked cauliflower with truffle butter and cheeses.

The three chefs show-off their Taste of the Nation plates: Baked cauliflower with quail eggs-from Chef Todd, short ribs over quinoa bean cakes presented by Chef Sean, and Chef Timon's SPAM Masubi is sushi style topped with fois gras.

The chefs, along with Petrillo, sat down for the tasting. They commenced dining with Chef Timon's SPAM.

"I would never know how good this is. It's a tasty treat", said Petrillo with a taste of the SPAM.

We also all loved Chef Sean's short ribs and Chef's Todd's cauliflower is dangerously delicious.

"it's a naughty vegetarian dish," said Chef Todd.

SOS Taste of the Nation will open its doors again on Tuesday June 17th for its 26th year.
