Tex Mex Chicken Cups

Ingredients:
1-1/2 pounds of boneless/skinless chicken breasts. Poach, drain, cool, and shred.
1 cup ranch dressing
tsp salt & tsp pepper
2 cups of shredded Monterey Jack cheese
2 T chili seasoning
1 cup of finely chopped red & green peppers
1 package of wonton wrappers (I find these in the fresh produce section)
Optional toppings - sour cream, salsa, and guacamole

Directions:
1. Mix shredded chicken with ranch dressing, salt, and pepper ~ set aside.
2. Combine shredded cheese with the chili seasoning ~ set aside.
3. Place wonton wrappers in muffin cups & bake 5-7 minutes at 350 degrees, or until slightly brown.
4. Cool until cups are set.
5. Scoop chicken mixture into wonton cups, sprinkle with cheese mixture, and top with green & red peppers.
6. Serve with salsa, sour cream, and guacamole.
