Phantom Gourmet: Spaghetti Spots In Massachusetts

BOSTON (CBS) -- "A mano" means "by hand" in Italian and that's exactly how Chef Antonio Bettencourt makes the pasta at his A Mano Italian Kitchen & Pizzeria in Salem's Pickering Wharf.

"I love to take flour, water and eggs and then turn it from just a pile of stuff into a full meal," he says. "It still kinda fascinates me as a cook to see flour become a meal that someone can enjoy like pasta."

The top-selling dish at Osterina Nino in Burlington is a classic Roman pasta called cacio e pepe. The dish has fresh cracked black pepper, house-made tonarelli pasta and pecorino cheese.

For something with some meat to it, try the hearty pasta bolognese at Arturo's in Westborough. It's made using pork and veal, tomatoes, onions, carrots, celery and white wine.

Of course, the best neighborhood for carbo-loading in Boston is the North End. With so many runners in town for the marathon, it's going to be a busy weekend on Hanover Street.
