Pumpkins are definitely trending. And we're not just saying that because it's fall. We've heard about them everywhere lately from lattes and candles to yogurt and martinis. I was surprised the other day when I saw pumpkin spice flavored almonds, (which doesn't at all sound appetizing to me) and then it hit me, pumpkin's are taking over the world... OK maybe I'm being a little dramatic, but they are definitely taking over fall.
As a pumpkin fan, I'm on board, as long as you don't make me eat pumpkin almonds. Take a look below and see all the great things you can do with pumpkins.
I'm sure that just about everyone has carved a pumpkin, and you also know that your pumpkin will rot within the first 48 hours that you carve it, so this year I've decided to paint my pumpkins like the blog My Sweet Savannah. She painted the chevron stripes, but you can paint a face or a scary scene or anything really, and then you don't have to worry about your pumpkin rotting.
I'm not opposed to carving pumpkin by any means, it's a Halloween tradition... and if you don't carve your pumpkin then how will you get the delicious pumpkin seeds from inside? (WARNING: Do not eat the seeds raw, they are not very tasty.)
But in case you want to make pumpkin seeds, here's how I make them:
Pre-heat your oven to 350*, Clean the seeds, Boil them for 20 min, Dry the seeds and make sure no pumpkin remnants are left (any remnants will burn in the oven), Add Seasoning*, Bake for 25-30 minutes or until golden brown
*Seasoning Ideas: Cinnamon and sugar, salt and cayenne pepper, paprika, ginger
It's a no-brainer, I love pumpkins and I love vodka... Why not combine the two?
- 1 graham cracker
- 1 Tbs honey
- 1/3 cup milk
- 2 Tbs pumpkin puree
- 1.5 ounces vanilla flavored vodka
- 1.5 ounces creme de cacao
- 1 pinch pumpkin spice
- 1 cup crushed ice
- Place graham cracker crumbs in a shallow dish. Coat rim of martini glass with honey, and dip into graham cracker crumbs to coat.
- Combine milk and pumpkin puree in a cocktail shaker, and shake to combine. Pour in vodka and creme de cacao, and add ice. Shake well, and then strain into prepared martini glass. Garnish with a sprinkle of pumpkin pie spice.

It tastes like a pumpkin pie and a cheesecake had a baby, because of the addition of the cream cheese. It is some work, but it definitely worth it. Find that recipe here.
