Menu:

Braised Veal Shank

Cauliflower, Potato, and Leek Soup
Yield 4 servings

Ingredients:
4 T. unsalted butter
1 white onion, small dice
2 leeks, white part only, small dice
3/4 cup white potato, peeled, small dice
1/2 head cauliflower, broken into large florets
1 cup chicken stock
1/2 cup heavy cream
salt and pepper to taste
1/2 t. ground nutmeg or to taste

Method:

1. Saute the onions and leeks in butter until soft, but do not brown.

2. Add cauliflower, potato, chicken stock, salt and pepper, and a pinch of nutmeg.

3. Bring to a boil, then turn heat down and simmer 20 minutes.

4. Puree in blender in small batches.

5. Add cream and adjust seasonings. Serve hot.

Braised Veal Shank
Yield 4 Servings

Ingredients:
1 T. olive oil
4 each veal shank, cut into 1-1/2-inch pieces
1 medium white onion, large dice
2 carrots, peeled and cut into large dice
1 celery stalk, cut into large dice
1 cup red wine
4 cups chicken stock or to cover shanks by 1 inch (amount will depend on size of pan used)
salt and pepper
2 t. fresh thyme

Method:

1. Sear both sides of each shank in hot pan with olive oil.

2. Add mirepoix (carrots, onion, and celery) and brown for 5-6 minutes.

3. Deglaze with red wine.

4. Add chicken stock and bring to a boil.

5. Turn down heat to low simmer, cover pan.

6. Cook for 2 hours or until meat is tender.

7. Remove shank. Keep warm.

8. Strain sauce.

9. Reduce liquid to sauce consistency.

10. Season with salt, pepper, and fresh thyme.

11. Plate shanks and pour sauce over.

Flambeed Bananas
Yield: 4 Servings

Ingredients:
2 bananas, peel and sliced
4 T. butter
2 T. brown sugar
1 t. cinnamon
2 oz. Gosling’s Black Seal Rum
4-8 scoops cinnamon ice cream

Method:

1. Melt butter, whisk in brown sugar and cinnamon

2. Add bananas. Cook 2 minutes on high heat.

3. Pull pan off the burner. Add rum and return to burner and flame.

4. Immediately pour over desired amount of ice cream.

Serve immediately.
