The "secret" appears to be out on Himitsu as it opened this fall as a kind of underground Tokyo cocktail bar to go along with the modern Japanese cuisine offered at Umi. Himitsu sells a 10-year old Port in Casa de Santa Eufemia. This is what one would call a perfect dessert Port, as it will pair well with Pâtissier Lisa Ito's Petit Fours, which are chocolate truffles and red bean pastry creme, macaroons and other assorted pastries.
