Love's romantic dinner for two

With just two days until Valentine's Day, love is definitely in the air. So who better to prepare out Valentines dinner than Tim Love?

Love, the chef and owner of the Lonesome Dove Western Bistro in Fort Worth, Texas, shared recipes for a romantic dinner for two that's sure to wow your sweetie this year.

RECIPES:

Roasted Rack of Lamb and Watercress Salad

INGREDIENTS:
1/2 of an American Lamb rack (should be an eight bone rack minimum) tell the butcher to leave the fat cap on but chine bones off
1/4 cup olive oil
1/4 cup coarse salt
1/4 cup red chile powder
1/4 cup rosemary fresh chopped
1/4 cup cilantro fresh chopped
1/4 cup coarse pepper
1/4 cup water

For Salad:
2 bunches watercress
Juice from one whole lime
Olive oil
Salt and pepper

METHOD:

Preheat oven at 350 degrees F.

Heat a heavy cast iron skillet on medium heat.

Mix salt, chile powder, pepper, rosemary, cilantro, and water in a stainless bowl to make a paste.

Score the top of the half rack with a sharp knife all the way through the fat cap to the top of the meat (about a half inch deep).

Pack the paste all around the rack.

Add oil to the cast iron skillet and place rack fat side down in skillet and sear for 2 minutes.

Flip rack and place skillet in the oven for 18 to 20 minutes.

While the rack is cooking in the oven, clean the watercress.

Remove rack from oven and let rest for five minutes.

While the meat is resting, mix the watercress, lime juice and a touch of olive oil and season with salt and pepper to taste.

Slice the rack and serve with the salad immediately.

Goat Cheese Souffle

INGREDIENTS:
1/3 pound unsalted butter
1 cup all purpose flour
1 tablespoon Shallots, minced
1 teaspoon garlic, minced
1 cup whole milk
6 eggs, separated
12 ounces Goat Cheese
2 tablespoon butter
1/2 cup cornmeal
1/2 cup walnuts
1 tablespoon Game rub
1/2 teaspoon salt

METHOD:

In a saute pan, melt 1/3 pound butter, saut? shallots and garlic. Add flour and form roux. Add milk and mix well, remove from heat and pour into mixing bowl. Add egg yolks, game rub, salt and goat cheese and mix well. Whip all egg whites into stiff peaks. Mix 1/3 whites into mixture. Fold the remaining 2/3 in.

Rub seven ramekins with butter, dust with cornmeal. Line ramekins with walnuts. Bake at 300 degree for 30 minutes.

One word described our Valentine's Day dinner... ASS-Salt! It was an assault on the senses and the rub wasted about $40 worth of rack! What the hell was that all about??? Who wrote the recipe down? Were y'all trying to kill slugs with it??? It's as if I spent the whole day blowing up a raft in the ocean! And by the way, a souffle does not bake in 300 degrees all that well! Weird since Tim suggested cooking it in a 400 degree oven! Thanks for ruining Valentine's Day and Tim Love's reputation! Worst dinner ever! Who transcribed the recipe... Hellen Keller???!!!

I found that Tim Love's thoughtless comments were highly offensive. I'd like it very much if he were not asked to appear on any show in the future. This is a family show. I was watching this show with my 10 year old son who has just been released from the hospital and was embarrassed to have put him through watching such a sexist pig sexually harass that poor woman on live television. I'm considering not watching your cooking segment if this happens again. Please be more considerate in choosing your guests. Thank you.

Tim Love's comments were inappropriate period! He engaged in sexual harrassment during his cooking segment and his comments were offensive and degrading. Perhaps you should screen your lower class guests more carefully before allowing them on air. I certainly will never visit his restaurant now that I know how tacky and sleazy he is.
