RECIPES

Grilled Tomato and Fresh Mozzarella Bruschetta


3 beefsteak tomatoes
1 cup olive oil
1 clove garlic, chopped
1/2 bunch cilantro
1/2 cup basil leaves, roughly torn
1 loaf, Italian bread, sliced
1/2 pound fresh mozzarella, sliced
Salt and pepper

Heat the grill to high heat.

In a mixing bowl combine 3/4 cup olive oil, garlic, and cilantro.

Coat the tomatoes with the marinade and place on the grill. Grill on all sides for 3-4 minutes. Remove the tomatoes and dice.

Slice one loaf of Italian bread and brush both sides of the slices with olive oil. Place on grill for approximately 30 seconds. Flip and repeat. Season lightly with salt and pepper.

Top with tomato and finish with one thin slice of fresh mozzarella. Garnish with torn basil leaves.

Grilled Soft Shell Crab, Sausage, and Veggies

6 large soft shell crabs
2 pounds spicy or mild sausage
1 cup olive oil
2 bunches cilantro
1 bunch asparagus
2 cloves garlic, chopped
1 pound fava beans
1/2 bunch ramps
6 ears, corn on the cob
salt & pepper

Turn grill to high. Get grill very hot.

In a large mixing bowl, add olive oil, garlic and cilantro and mix well. Place the crabs, asparagus stalks, and ramps in the bowl and coat well with marinade, and let sit for approximately 15 minutes.

Before placing on grill, season liberally with salt and pepper (a good tip when grilling is to always over-season as the seasoning will "grill off" during the process). Grill on all sides for 3-4 minutes.

Place whole, unshelled favas on the grill, and grill until tender.

The corn should be kept in the husk and soaked in water for three minutes before placing directly on the grill.

Let it cook for approximately 8-10 minutes, rotating every few minutes. All the items should be grilled at the same time and served on a large platter.


Watermelon and Peach Salad

1 whole watermelon, seeded and cubed
6 peaches, pitted and sliced
Juice of one lemon
Salt

In a large mixing bowl, toss the watermelon and peaches with the lemon juice and let rest. Sprinkle salt on top and mix well. Serve cold.

Ah, but if one ate his 5 relatives with some fava beans and chianti, he''d be saving $50... and on his way to writing a knock-off of an overrated motion picture... I mean, that story about the lambs had NOTHING to do with mutton; I felt cheated and walked out out the theater...
