That news comes from lab tests in mice.
Some of the mice had their drinking water laced with nitrites or nitrates for a week. For comparison, other mice got ordinary drinking water.
After a week, the researchers gave the mice an induced heart attack in order to see how their hearts fared after the heart attack.
The hearts of mice in the nitrite or nitrate groups had less heart attack damage than the mice that had drunk plain water in the week before the induced heart attack.
Dietary sources of nitrites and nitrates included cauliflower, spinach, collard greens, broccoli, meat, and meat products.
The researchers included Nathan Bryan, PhD, of the University of Texas Houston Health Sciences Center and David Lefer, PhD, of New York's Albert Einstein School of Medicine.
In a news release, Bryan says the next step for researchers is to study nitrates and nitrites in people.
Lerner is a participant in a pending patent regarding the use of sodium nitrate in cardiovascular disease. Bryan serves on the scientific advisory board of the supplement company TriVita Inc.
Their study appears in this week's online early edition of Proceedings of the National Academy of Sciences.

Nitrites are metabolized in the body to nitric oxide, so it doesn''t require a very high IQ to draw the conclusion that nitrates are metabolized to nitric oxide via nitrites.

Without nitric oxide, an erection is impossible. So is intestinal peristalsis.
Yes, nitric oxide is also a metabolite of the amino-acid, arginine, but, the point I am making is this. It is impossible to avoid ingesting nitrates in a HEALTHY diet so, as always, moderation is the key. - Reply to this comment

- 3 Nitrates Many foods, especially cured meats such as bacon and hot dogs, use nitrates to preserve color and maintain microbial safety. Nitrate is harmless, but it can convert to nitrite, which can form nitrosamines, a powerful cancer-causing chemical, in your body. Whenever possible, look for nitrate-free preserved meats. When you do eat foods containing nitrates, have a glass of orange juice at the same time (for instance, orange juice with your morning bacon). Vitamin C is known to inhibit the conversion to nitrosamines in your stomach.

The good news is that if you like the convenience of deli foods there are manufacturers out there that do not use nitrites in their products. Ask your grocer to carry these products. Specifically look for brands like Applegate Farms, and Diestel which make great tasting organic, nitrite and nitrate free sliced turkey, ham, and more.

Deli Meat, High Blood Pressure, and Cancer
A new study out of Columbia University links cured meat consumption with hypertension (high blood pressure). The most susceptible age group was noted to be those between the ages of 17 and 40, The main culprit here appears to be nitrites, often used during the curing process. Nitrites are commonly found in such deli items as processed sandwich meats like turkey, ham and roast beef, hot dogs, bacon and some cured fish products.
Nitrites and nitrates are nitrogen-oxygen chemical units which combines with various organic and inorganic compounds. Many food manufacturers add nitrites or nitrates to their products to improve shelf stability or just to preserve the product. Once taken into the body, nitrates are converted into nitrites.
Nitrates can also occur in drinking water. The Federal Government has set "allowable" standards for naturally occurring nitrates but many areas of the country have problems with water due to nitrate contamination. Excessive ingestion of nitrates/nitrites can lead to other serious health consequences including disruption of thyroid disorder, cancer (childhood leukemia), and hemorrhaging of the spleen.
