Lula Mae's Brown Sugar Pecan Pie

(CBS)  Lula Mae's Brown Sugar Pecan Pie
From "In Praise of Pecans: Recipes and Recollections" by June Jackson (Bright Sky Press).
Serves 8





1 box (16 ounces) light brown sugar
3 tablespoons self-rising flour
6 tablespoons evaporated milk
3 eggs
1/2 cup butter, melted
2 teaspoons vanilla extract
2 teaspoons apple cider vinegar
1 teaspoon cornmeal
1 cup pecan pieces
1 unbaked pie shell (9 inches)

1. Preheat oven to 350 degrees.

2. In a mixing bowl, comb in the brown sugar and flour.

3. Add milk, eggs, butter, vanilla, vinegar and cornmeal; stir to blend.

4. Spread pecans evenly in pie shell.

5. Pour egg mixture over pecans.

6. Bake for 1 hour or until set.
