Memorial Day Feast
(CBS)

"Bluezette"
Philadelphia, Pa.
Menu:
Fried Green Tomatoes
Southern Fried Chicken
Potato Salad
Corn Bread
Apple Pie
Fried Green Tomatoes
Ingredients:
2 green tomatoes
1/2 cup of flour
1/2 cup of buttermilk
salt and pepper to taste
1/2 cup of canola oil
Method:
Slice tomatoes 1/2-inch thick.
Place tomatoes in buttermilk.
Mix flour, salt, and pepper together.
Dredge tomatoes in flour mixture and knock off all excess flour.
Heat oil to 350 degrees.
Fry till golden brown (approx. 3-5 minutes)
Ramoulade for Fried Green Tomatoes:
Ingredients:
1 cup mayonnaise
1/4 cup relish
tsp. cayenne pepper
1/2 tsp. fresh dry oregano
1/2 tsp. thyme
1 tsp. paprika
1 tsp. ketchup
1 tbsp. Tabasco hot sauce
1 tbsp. Creole mustard
5 hard-boiled eggs
salt
pepper
Method:
Grate hard-boiled eggs, then mix all of the above ingredients. Add salt and pepper to taste.
Southern Fried Chicken
Ingredients:
(a) 3 whole chickens
(b) 1/4 cup hot sauce
(c) 1 quart of canola oil
(d) 3 cup of all purpose flour
(e) 1/2 tbsp. season salt
(f) 1/2 tbsp. pepper
Method:
Ingredients:
12 medium Red Blis potatoes
4 celery stalks
1 Spanish onion
1 green bell pepper
2 carrots
1/2 cup sweet relish
2 tbsp. French's Yellow Mustard
6 eggs boiled
2 cups Hellman's Mayonnaise
1 tbsp. sugar
Salt and pepper to taste
Method:
- Boil potatoes with skin until tender.
- Drain when cool, peel and cut into cubes.
- Chop the follow ingredents: eggs, celery, onions, and green pepper. Then skin and grate the carrots.
- Mix all ingredents with potatoes
- Add mayonaise, mustard, relish and sugar
- Mix well.
- Add salt and pepper to taste.
Corn Bread:
Ingredients:
2 cups of cornmeal
1/2 cups of flour
1 1/2 of milk
2 eggs
1/2 tsp. baking powder
1/2 stick of butter
1/2 tsp. salt
1 tbsp. sugar
Set temperature for oven at 400 degrees.
Mixing Method:
- Mix all dry ingredients together
- Stir in eggs to ingredients and blend
- Pour in milk and blend into mixture
Take a 9x9 baking pan and apply some cooking grease.
Pour mixture in 9x9 baking pan and bake for 30 minutes.
Apple Pie
Ingredients:
1 pre-made pie shell
3-5 Granny Smith apples
2 Macintosh apples
1 cup of granulated sugar
2 tsp. of cinnamon
1/2 teaspoon of nutmeg
1 tbsp. of butter (slightly melted)
2 tbsp. of lemon juice
Pre-heat oven to 325 degrees.
Slice the apples. Mix all the ingredients in a bowl. Then pour into the pe shell.
Cook pie at 325 degrees for 25 minutes.

- Marinate chicken overnight in hot sauce
- Heat canola oil to 325 degrees.
- Mix together all dry ingredients (d,e,f)
- Coat chicken in flour mix, shake excess flour off chicken.
- Gently lay chicken in hot oil (325 degrees) and brown both sides until golden brown.
- When done, lay on a tray covered with plenty of paper towel to drain off excess oil before serving.
