"Bright Eye": The "Sunday Morning" cocktail

Start off the New Year with these delightful concoctions by drink experts Christy Pope and Chad Solomon, of the Brooklyn-based Cuffs & Buttons - including the "Bright Eye," a recipe created especially for "Sunday Morning"!


Bright Eye
Created for "Sunday Morning" by Cuffs & Buttons

Ingredients:
1 oz. Earl Grey-infused Tanqueray*
1/4 oz. Campari
2 tsp. Orange marmalade
1/2 oz. Lemon juice
1/2 oz. Grapefruit juice
1 Egg white

Glass: Champagne Coupe

Garnish: Angostura "Bright Eye" Stencil logo & Bright Eye Essence (Bergamot, Wild Sweet Orange)

In a mixing tin, crack egg and separate egg white into mixing tin. Then, measure remaining ingredients into tin.

Cap shaker and dry shake without ice to emulsify egg white and cocktail mix.

Next, uncap shaker and then add ice and shake vigorously until chilled and properly diluted. Uncap shaker and strain over into a frozen champagne coupe glass.

Spritz with Bright Eye essence over top of drink, then stencil logo onto froth.

* Earl Grey Infusion: In a 1-qt. mason jar, add one 750 ml. bottle of Tanqueray Gin and 3 tablespoons of loose leaf Earl Grey Tea. Cap jar and agitate. Let infuse for 2 hours, then fine strain. Do not let sit longer than 2 hours, otherwise infusion will be too tannic and bitter.

Morning Mojo

Ingredients:
3/4 oz. Laird's Bonded Applejack
3/4 oz. Flor De Cana 7-yr. rum
1/2 oz. Maple syrup
1/2 tsp. Lactart
1 Egg white
1/4 tsp. Cinnamon Tincture*
1/8 tsp. Cardamom Tincture*
1 oz. Club soda, then top

Glass: Highball

Garnish: Orange Zest and Discard

In a mixing tin, crack egg and separate egg white into mixing tin. Then, measure remaining ingredients except soda into tin. Cap shaker and dry shake without ice to emulsify egg white and cocktail mix.

Next, uncap shaker and then add ice and shake vigorously until chilled and properly diluted. Uncap shaker and strain over fresh ice into a Highball glass. Slowly top with soda to build a nice frothy head, then express orange zest over top of drink and discard orange peel.

* Cinnamon Tincture: In a mason jar add 30 g. of cinnamon and 250 ml. 80-proof vodka. Cap mason jar and shake vigorously. Let macerate for 14 days, agitating daily. Fine strain and keep in a labeled bottle.

* Cardamom Tincture: In a mason jar add 30 g. of green cardamom and 250 ml. 80-proof vodka. Cap mason jar and shake vigorously. Let macerate for 14 days, agitating daily. Fine strain and keep in a labeled bottle.


Trumpets Call

Ingredients:
1/4 oz. Campari
1/2 oz. St. Germain Elderflower liqueur
1/4 oz. Orange blossom honey syrup (2 parts Honey, 1 part water)
1/2 oz. Freshly squeezed lemon juice
1/2 oz. Freshly squeezed grapefruit Juice
Top w/ Perrier Jouet Grand Brut Champagne

Glass: Trumpet Champagne Flute

Garnish: 3/2 spritz of Trumpets Call Essence*

In a mixing tin, measure all ingredients with the exception of the Champagne. Add ice, then shake vigorously until properly chilled and diluted.

Uncap shaker and strain into a trumpet champagne flute that has been spritzed 3 times with Trumpets Call essence, then top with Champagne. Finish with 2 more spritzes of essence over top of drink.

* Trumpets Call Essence: Green Lemon, Wild Sweet Orange, Yellow Mandarin
