Many years ago, I worked for an airport food service company, as a restaurant manager. Often, we would prepare food for the airlines. Our facility was clean, almost spotless, and the food was always top quality.
The utility workers and kitchen helpers had daily cleaning chores, sometimes several times in one day. It required constant effort to keep everything clean, but we did it.
Trouble is, roaches come in with the boxed produce such as lettuce, tomatoes and avocadoes. It is a nightmare to try to control.
At the first sight of one roach, the pest control people came out and set bait, and sprayed the entire kitchen and storeroom areas. Sometimes that meant three times in one week. Other times, it might have been every two weeks.
My food service policy was - "CQC" meaning Cleanliness, Quality and Consistency, at a fair price.
For any food service facility to have the conditions described in the article it would be totally unacceptable.
"food". Did they check the health of the people who work at this caterer? Many people are coming into our country with active TB and other diseases. Active TB is showing up in various parts of our country again. I don't think the Department of Health is doing a good job on checking the health of many of the people who work in caterer's a food company's. Many of them hire illegal workers. Why do the Chinese restaurant's hire so many Latino's to work in their kitchen's? Wait staff don't wear uniforms in many restaurants anymore. How clean are their street clothes when they work in the kitchen? Check the outside back of the restaurant & many times you will see a really messey place. We don't eat out much anymore, even expensive places are dirty and the staff can be really messy. The next time I see a guy cleaning the tables with a dish rag and then use the same dish rag on the seats, then go the next table, use the same dish rag on that table and the chairs, I'm gonna hurl..and we are not going back to that place. That's why we don't eat our much anymore. And, we are tired of paying a lot for rude people and poor food. America needs to do away with the tipping system. The owners should pay their staff a decent wage instead of asking us to pay for their help, because that's what we are doing when we pay our tip, we are paying for their wages.
